Recipes from Kenny's Kitchen!

Tried and true recipes are the product of over 20 years of dedicated determination to be the best! These crowd-pleasing tidbits from Kenny's repertoire have not only pleased the toughest judges at area contests, but an even tougher group: Kenny's friends and family, a group that itself boasts some very fine country cooks, Italian chefs, and master grillers!
Italian Kale
1/2 vidalia onion chopped
1 bunch kale   (with stems removed)
2 Tsp minced garlic
1/2 tsp pepper
1/2 tsp Tony Chacheres
2 eggs
4 oz sliced fresh mushrooms
Parmesan on top
3 T Olive oil, add more as necessary since bunches of Kale vary in size...
You will need a large stock pot because the kale is fluffy and all this won't fit in a frying pan.
Wash kale and remove stems.   Drain thoroughly.   Saute onions in olive oil, add garlic when onions are clear and
saute until garlic begins to brown..   Put kale on top, add Tony's, mushrooms, pepper.  Cover and let it sweat.  Check frequently.
If mixture begins to stick, add a little more olive oil.     Flip constantly with a wooden spoon. When cooked to your liking, add eggs and cook until eggs are done.   Top with Parmesan.
Serve to very appreciative family and friends!
